Perched on the heights of Paris, L'Esquisse is an exquisite table, magnetically forcing all-Paris gourmets to climb Montmartre to taste their bistronomic summit! While avoiding the cliché of an old Paris unsheathed for tourists, L'Esquisse draws itself in true bistro parigot with wooded frontage, tables in wood, chairs Tolix, counter where the slates are posed, trailing crates of wine ... and open kitchen for greedy with the eyes!
In this one, Laëtitia Bret (eg Bristol and Ritz) paints beautiful paintings with rooted influences as multicultural: first glimpse with the veal tartare asimitated in a spring rolls, the whelks orientated in a tabouleh of whelks and raz el hanout and the frayed oxtail nested in an additive steamed bun with avocado and radish. Rabbit's saddle, pistachio pesto and new turnips, fillet of whiting, wasabi broth, romanesco, Jerusalem artichokes and pork fries and mashed parsnip show the chef's desire to preserve the classics of the French terroir, while by giving them a new breath. In the last stroke, the pear pancake or the soft stracciatella mousse & chocolate revives.
In short, the beautiful gastronomy does not belong here to any precise movement but evolves with the head ... Chapeau, the artist!
